Pepperoni Rolls

Difficulty: Very Hard

Yield: 8 Servings

Prep Time: 2.5 hrs

Cook Time: 20 min

Ingredients:

  • 3 cups of bread flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 package dry yeast
  • 1 tablespoon sugar
  • 1 package sliced pepperoni
  • 1 package shredded mozzarella cheese
  • Water

Directions:

  • Mix yeast and sugar
  • Add 1/2 cup warm water and stir
  • Let sit until bubbly
  • In food processor bowl, place flour, salt and oil
  • Mix
  • With motor running pour in yeast mixture followed by enough cold water to make dough that clings to the inside of the bowl
  • Whirl the dough ball about 30 times around the bowl
  • Let sit for 5 minutes
  • Whirl the dough about 30 more times, adding a little more flour if dough seems stick
  • Take dough out of processor and knead until smooth dough is obtained
  • Place in an oiled bowl covered with plastic wrap and let rise in warm place until doubled in volume (about 1 hr)
  • Knead again lightly and divide into 9 equal portions
  • Flatten each portion
  • Add pepperoni and cheese.
  • Cover with plastic wrap.
  • Let rise in warm place until doubled in volume (45 min -1 hr).
  • Bake 375 deg F for 20 minutes or until nicely browned

Quick Tip: It is best served warm, right out of the oven
