Peanut - Cashew Brittle

Peanut and Cashew Brittle

Cook Time: 1 hr

Ingredients:

  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/2 cup water
  • 1/2 tsp salt
  • 2cups raw shelled nuts
  • 2 tablespoons butter
  • 2 teaspoons baking soda

Directions:

  • Heat on high: sugar, syrup, water and salt until it comes to a complete boil
  • Add nuts, reduce heat to medium and stir constantly
  • Cook these ingredients until it comes to a hard crack stage
  • Add butter, then baking soda
  • Beat rapidly and pour on a buttered surface spreading 1/4in thickness
  • Let harden completely and then break apart and store in air tight container
