Mini Sweet Potato Muffins

Ingredients:

  • 1 cup all purpose flour
  • 1 cup old fashioned oats
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 large eggs, whisked
  • 1 sweet potato, cooked and pureed
  • 1/2 cups blueberry preserves or your favorite fruit preserves
  • 1/2 cup low fat milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Directions:

  • Preheat oven to 350 deg F
  • Place the first 7 (dry) ingredients in a bowl and whisk to combine
  • In a separate bowl whisk the remaining (wet) ingredients
  • Then combine the dry ingredients with the wet ingredients until mostly smooth
  • Place batter into greased mini-muffin pan
  • Bake for 15 minutes.
