Caramelized French Onion Dip

Cook Time: 45 min

Ingredients:

  • 1 tablespoon olive oil
  • 2 1/4 cups silvered yellow onions
  • 1/2 teaspoon salt
  • 4 ounces low-fat cream cheese
  • 1/2 cup nonfat Greek style yogurt
  • 4 ounces low fat sour cream
  • Freshly ground black pepper

Directions:

  • Heat the olive oil in a large skillet over medium heat
  • Add onions and salt
  • Sauté 35-40 minutes until golden brown, stirring occasionally
  • Set aside to cool
  • Place cooled onions in food processor
  • Pulse several times to chop
  • Remove 1/2 of the onions and place them in a mixing bowl
  • Add the remaining ingredients to the food processor
  • Process until smooth
  • Spoon into mixing bowl and combine with chopped onions
